Ingredients
  

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 2 large eggs
  • ¾ cup whole milk
  • 1 teaspoon vanilla extract
  • 2 cups peeled cored, and finely chopped apples (about 2 medium apples)
  • Vegetable oil for frying

Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions
 

  • Prepare the Batter:
    In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
    In another bowl, beat the eggs, then add the milk and vanilla extract. Mix well.
    Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the chopped apples.
  • Heat the Oil:
    Pour about 2 inches of vegetable oil into a deep skillet or pot. Heat the oil to 350°F (175°C) over medium heat. Use a thermometer to maintain the temperature.
  • Fry the Fritter Bites:
    Using a small cookie scoop or a tablespoon, carefully drop spoonfuls of batter into the hot oil. Avoid overcrowding the pan.
    Fry the fritter bites for about 2-3 minutes on each side, or until they are golden brown and cooked through.
    Use a slotted spoon to transfer the fritter bites to a paper towel-lined plate to drain excess oil.
  • Prepare the Glaze:
    In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk if needed.
  • Glaze the Fritter Bites:
    Dip each warm fritter bite into the glaze, allowing any excess to drip off.
    Place the glazed fritter bites on a wire rack set over a baking sheet to catch any drips.
  • Serve:
    Allow the glaze to set for a few minutes before serving the apple fritter bites warm.

Notes

For an extra indulgent treat, serve your fritters with a scoop of vanilla ice cream or a dollop of whipped cream. The cold creaminess pairs perfectly with the warm, crispy fritters.
