Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter melted
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas mashed (about 1 1/2 cups)
  • ¼ cup milk
  • Optional: 1/2 cup chopped nuts or chocolate chips

Instructions

  • Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with paper liners.
  • Prepare Dry Ingredients:
In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined. Set aside.
  • Mix Wet Ingredients:
In a separate bowl, mix together the melted butter and granulated sugar until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  • Combine Wet and Dry Ingredients:
Add the mashed bananas to the wet ingredients and mix until well combined. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mixing until just combined. Be careful not to overmix.
  • Optional: Add Nuts or Chocolate Chips:
If desired, fold in the chopped nuts or chocolate chips until evenly distributed throughout the batter.
  • Fill Muffin Cups:
Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  • Bake:
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Cool and Serve:
Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature, and enjoy!
