  • 6 slices bacon cooked and crumbled
  • 1 ½ cups shredded cheese cheddar, mozzarella, or pepper jack
  • 4 large flour tortillas
  • 2 tablespoons butter or oil for cooking
  • ½ cup diced onions optional
  • ½ cup diced bell peppers optional

Step 1: Prepare the Ingredients

  • Cook and shred the chicken if not using pre-cooked rotisserie chicken.
  • In a bowl, mix the shredded chicken with BBQ sauce until fully coated.
  • Cook the bacon in a skillet until crispy, then chop it into small pieces.
  • If using onions and bell peppers, sauté them in a pan over medium heat until soft.

Step 2: Assemble the Quesadillas

  • Lay a tortilla flat on a clean surface.
  • Spread a portion of the BBQ chicken evenly over half of the tortilla.
  • Sprinkle crumbled bacon over the chicken.
  • Add a generous amount of shredded cheese.
  • Fold the tortilla in half, pressing gently to hold everything together.

Step 3: Cook the Quesadillas

  • Heat a skillet over medium heat and add butter or oil.
