Ingredients
  

For the Dough:

  • 2 ¼ cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 ¼ teaspoons active dry yeast
  • 1 cup warm water
  • 2 tablespoons olive oil

For the Filling:

  • 2 cups cooked chicken breast shredded or diced
  • ½ cup buffalo sauce
  • ¼ cup ranch or blue cheese dressing
  • 1 cup shredded mozzarella cheese
  • ¼ cup diced red onion
  • 2 tablespoons chopped fresh cilantro or parsley optional
  • Extra buffalo sauce and ranch or blue cheese dressing for dipping optional

Instructions
 

  • Prepare the Dough:
    In a large mixing bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
    Add the flour, salt, and olive oil to the yeast mixture. Stir until a dough forms.
    Turn the dough out onto a lightly floured surface and knead for about 5 minutes until smooth and elastic. Alternatively, you can use a stand mixer with a dough hook attachment.
    Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  • Prepare the Filling:
    In a mixing bowl, combine the cooked chicken with buffalo sauce and ranch or blue cheese dressing. Mix until the chicken is evenly coated.
  • Assemble the Calzones:
    Preheat your oven to 425°F (220°C).
    Punch down the risen dough and divide it into two equal portions. Roll each portion out into a circle, about 8-10 inches in diameter, on a lightly floured surface.
    Spoon half of the buffalo chicken mixture onto one half of each dough circle, leaving a border around the edges.
    Sprinkle shredded mozzarella cheese over the chicken mixture, followed by diced red onion and chopped cilantro or parsley, if using.
    Fold the other half of the dough over the filling to form a half-moon shape. Press the edges together to seal, and crimp with a fork to secure.
  • Bake the Calzones:
    Transfer the assembled calzones to a baking sheet lined with parchment paper.
    Use a sharp knife to make a few small slits on top of each calzone to allow steam to escape during baking.
    Bake in the preheated oven for 15-20 minutes, or until the calzones are golden brown and crispy.
  • Serve:
    Let the calzones cool for a few minutes before slicing and serving.
    Serve with extra buffalo sauce and ranch or blue cheese dressing on the side for dipping, if desired.
