  • 2 tablespoons butter
  • 3 medium apples peeled, cored, and diced (Granny Smith or Honeycrisp)
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

For the Casserole

  • 1 loaf (14–16 oz) brioche or challah bread cut into 1-inch cubes
  • 6 large eggs
  • 1 ½ cups whole milk
  • ½ cup heavy cream or more milk
  • ¼ cup granulated sugar
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt
  • ½ cup caramel sauce plus more for drizzling

Optional:

  • 4 oz cream cheese cubed
  • cup chopped pecans or walnuts

Instructions
 

Step 1: Prepare the Apple Filling

  • In a large skillet over medium heat, melt the butter.
  • Add the diced apples, brown sugar, cinnamon, and nutmeg.
  • Cook for 6–8 minutes, stirring occasionally, until the apples are tender and lightly caramelized. Set aside to cool slightly.

Step 2: Assemble the Casserole

  • Grease a 9x13-inch baking dish.
  • Spread half of the cubed bread into the dish.
  • Layer the cooked apples evenly over the bread.
  • (Optional) Scatter cream cheese cubes and nuts over the apples.
  • Top with the remaining bread cubes.

Step 3: Make the Custard Mixture

  • In a large bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, and salt.
  • Pour the mixture evenly over the bread and apples.
  • Press gently with a spatula to help the bread absorb the custard.
  • Drizzle caramel sauce over the top.
  • Cover tightly with foil and refrigerate for at least 4 hours or overnight.

Step 4: Bake the Casserole

  • Preheat the oven to 350°F (175°C).
  • Remove the casserole from the fridge and let it sit at room temperature for 20 minutes.
  • Bake uncovered for 45–55 minutes, until the center is set and the top is golden brown.
  • Let cool for 10 minutes, then drizzle with additional caramel sauce and serve warm.
