  • 2 tablespoons butter or olive oil
  • 2 large yellow onions thinly sliced
  • 1 teaspoon salt divided
  • 1 clove garlic minced
  • 8 oz cream cheese softened
  • 1 cup sour cream or mayonnaise
  • 2 cups Gruyere cheese shredded (reserve ½ cup for topping)
  • ¼ cup Parmesan cheese grated (optional, for topping)
  • ½ teaspoon black pepper
  • 1 teaspoon fresh thyme plus more for garnish

Instructions
 

Caramelize the onions:

  • Heat butter in a large skillet over medium-low heat.
  • Add sliced onions and ½ teaspoon salt. Cook slowly, stirring occasionally, for 30–35 minutes until golden brown and jammy.
  • Add garlic and cook for 1–2 minutes. Remove from heat and let cool slightly.

Prepare the dip base:

  • In a mixing bowl, combine softened cream cheese, sour cream, and 1½ cups of Gruyere. Stir until smooth.

Mix in onions and seasonings:

  • Fold in the caramelized onions, thyme, remaining ½ teaspoon salt, and black pepper.

Assemble the dip:

  • Transfer the mixture into a greased baking dish.
  • Sprinkle with reserved Gruyere and Parmesan (if using).

Bake the dip:

  • Preheat oven to 375°F (190°C).
  • Bake for 20–25 minutes, until hot and bubbly with a golden top.
