Ingredients
  

  • 2 lbs flank steak or skirt steak
  • ¼ cup fresh lime juice about 2 limes
  • ¼ cup fresh orange juice about 1 orange
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Corn or flour tortillas
  • Fresh cilantro for garnish
  • Diced onion for garnish
  • Lime wedges for serving
  • Pico de gallo, salsa verde, or guacamole for topping (optional)

Instructions
 

Prepare the Marinade:

  • In a large bowl or resealable plastic bag, combine the lime juice, orange juice, olive oil, minced garlic, ground cumin, chili powder, smoked paprika, oregano, salt, and black pepper. Mix thoroughly.

Marinate the Steak:

  • Add the flank steak (or skirt steak) to the marinade and make sure the meat is evenly coated. Seal the bag or cover the bowl and refrigerate for at least 1 hour, or up to 8 hours for more flavor.

Preheat the Grill:

  • Preheat your grill to high heat (around 450°F). If using a stovetop, heat a cast-iron skillet over high heat.

Grill the Carne Asada:

  • Remove the steak from the marinade and let it rest at room temperature for 20 minutes before grilling. Grill the steak for 4-5 minutes on each side for medium-rare, or adjust based on your preferred doneness.

Rest the Meat:

  • Once grilled, remove the steak from the heat and let it rest for 5-10 minutes to retain its juices.

Slice the Carne Asada:

  • Slice the carne asada against the grain into thin strips for maximum tenderness.

Warm the Tortillas:

  • While the meat is resting, warm the tortillas on the grill or in a skillet for 30 seconds on each side until soft and pliable.

Assemble the Tacos:

  • Place a few slices of carne asada on each tortilla. Top with fresh cilantro, diced onion, and a squeeze of lime. Add salsa, guacamole, or pico de gallo for extra flavor.

Serve:

  • Serve the tacos immediately with your favorite sides and drinks.
