Ingredients
  

  • 2 to 3 cups riced cauliflower from 1 medium head
  • 2 large eggs
  • ¼ cup grated Parmesan cheese or almond flour
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheese cheddar, mozzarella, or a blend
  • 1 teaspoon dried oregano optional
  • 1 tablespoon olive oil or butter for pan grilling

Instructions
 

Rice the cauliflower

  • Use a food processor or box grater to finely grate cauliflower into rice-sized pieces. You’ll need about 2 to 3 cups.

Remove the moisture

  • Place the riced cauliflower in a clean dish towel or cheesecloth and squeeze out as much moisture as possible. This is crucial for a crispy texture.

Mix the cauliflower dough

  • In a bowl, combine the cauliflower with egg, parmesan, and seasonings. Mix until a thick, moldable dough forms.

Form the bread slices

  • Line a baking sheet with parchment paper and shape the dough into 4 square or rectangular "bread" slices. Bake at 425°F (220°C) for 15–20 minutes until golden and firm.

Assemble the sandwich

  • Place shredded or sliced cheese between two cauliflower slices. Grill on a skillet over medium heat for 2–3 minutes per side until the cheese melts and the exterior is crisp.
