Ingredients
  

For the Chicken:

  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

For the Bruschetta Topping:

  • 2 cups diced tomatoes about 4 medium tomatoes
  • ¼ cup red onion finely chopped
  • 2 cloves garlic minced
  • ¼ cup fresh basil chopped (or 1 tablespoon dried basil)
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste

For the Stuffing:

  • 1 box 6 oz stuffing mix (such as Stove Top)
  • 1 ½ cups hot water
  • ¼ cup butter melted

For the Cheese Topping:

  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

Instructions
 

  • Preheat Oven:
    Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish or line it with parchment paper for easy cleanup.
  • Prepare the Chicken:
    Season the chicken breasts with salt and pepper on both sides. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Sear the chicken breasts for about 2-3 minutes on each side until golden brown. Transfer the chicken to the prepared baking dish.
  • Make the Bruschetta Topping:
    In a medium bowl, combine the diced tomatoes, red onion, garlic, basil, balsamic vinegar, and 1 tablespoon of olive oil. Season with salt and pepper to taste. Stir until well mixed. Spoon the bruschetta mixture evenly over the chicken breasts.
  • Prepare the Stuffing:
    In a large bowl, combine the stuffing mix, hot water, and melted butter. Stir until the stuffing mix is moistened. Let it sit for a few minutes to absorb the liquid.
  • Assemble the Bake:
    Spread the prepared stuffing mixture evenly over the top of the bruschetta-topped chicken breasts.
  • Add the Cheese:
    Sprinkle the shredded mozzarella and grated Parmesan cheeses evenly over the stuffing layer.
  • Bake:
    Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the chicken is cooked through (internal temperature of 165°F).
  • Serve:
    Let the chicken bruschetta bake rest for a few minutes before serving. Garnish with additional fresh basil if desired.
