For the Chicken:

- ¼ cup red onion finely chopped
- 2 cloves garlic minced
- ¼ cup fresh basil chopped (or 1 tablespoon dried basil)
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- Salt and pepper to taste
For the Stuffing:
- 1 box 6 oz stuffing mix (such as Stove Top)
- 1 ½ cups hot water
- ¼ cup butter melted
For the Cheese Topping:
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
