  • 12 ounces rotini or penne pasta
  • 2 cooked chicken breasts diced (or 3 cups shredded rotisserie chicken)
  • cups sweet corn fresh, frozen, or canned
  • 4 cups chopped romaine lettuce
  • ½ cup freshly grated Parmesan cheese
  • 1 cup croutons
  • 2 tablespoons chopped fresh parsley optional

For the Caesar Dressing

  • ¾ cup Caesar dressing
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 garlic clove minced
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons grated Parmesan cheese

Instructions
 

Step 1: Cook the Pasta

  • Cook the pasta until al dente. Drain, rinse briefly with cool water, and allow it to cool completely.

Step 2: Prepare the Corn

  • If using fresh corn, cook it first. If using frozen corn, thaw it completely. Drain canned corn thoroughly.

Step 3: Prepare the Chicken

  • Dice or shred the cooked chicken into bite-sized pieces.

Step 4: Make the Dressing

  • In a small bowl, whisk together: Caesar dressing, Lemon juice, Dijon mustard, Garlic, Parmesan cheese, Black pepper
  • This enhances the flavor while keeping the dressing creamy.

Step 5: Assemble the Salad

  • In a large serving bowl combine: Cooked pasta, Chicken, Corn, Parmesan cheese,
  • Pour the dressing over everything and toss until evenly coated.

Step 6: Add the Lettuce

  • Fold in the chopped romaine just before serving to keep it crisp.

Step 7: Finish with Croutons

  • Top with croutons and additional Parmesan cheese.
  • Garnish with chopped parsley if desired.
