Instructions

Step 1: Roast the Tomatoes

  • Preheat your oven to 425°F (220°C).
  • Place the cherry tomatoes in a baking dish. Toss with olive oil, garlic, Italian seasoning, salt, and pepper.
  • Roast for 25 to 30 minutes until the tomatoes burst and become caramelized around the edges. The juices released during roasting will create a flavorful base for the orzo.

Step 2: Cook the Orzo

  • While the tomatoes roast, heat olive oil in a large skillet over medium heat.
  • Add the orzo and toast it for 2 to 3 minutes, stirring frequently. Toasting enhances the nutty flavor and helps prevent the pasta from becoming mushy.
  • Pour in the vegetable broth and bring to a gentle simmer. Cook for about 8 to 10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.

Step 3: Combine the Ingredients

  • Transfer the roasted tomatoes and all of their juices into the skillet with the cooked orzo.
  • Stir gently to combine. The tomato juices will coat the pasta and create a naturally creamy sauce.
  • Taste and adjust the seasoning with additional salt and pepper if needed.

Step 4: Add the Whipped Feta

  • There are two excellent ways to serve this dish.
  • You can stir part of the whipped feta directly into the warm orzo for a creamy consistency throughout.
  • Alternatively, spread the whipped feta onto a serving platter and spoon the roasted tomato orzo over the top for a beautiful presentation.
  • Finish with fresh basil, parsley, and cracked black pepper.
