Ingredients

  • 12 ounces spaghetti or linguine
  • 2 cups cherry tomatoes
  • 8 ounces burrata cheese
  • 4 cloves garlic minced
  • 3 tablespoons olive oil
  • ¼ teaspoon red pepper flakes optional
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup grated parmesan cheese
  • ¼ cup fresh basil leaves torn
  • ¼ cup reserved pasta water

Instructions

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water before draining.

Step 2: Sauté the Garlic

  • Heat olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant.

Step 3: Cook the Tomatoes

  • Add the cherry tomatoes, salt, black pepper, and red pepper flakes to the skillet. Cook for 8–10 minutes, stirring occasionally, until the tomatoes soften and burst.

Step 4: Combine the Pasta and Sauce

  • Add the drained pasta to the skillet with the tomatoes. Pour in the reserved pasta water and toss everything together until the pasta is evenly coated.

Step 5: Add the Burrata

  • Transfer the pasta to serving bowls or a large serving platter. Tear the burrata cheese over the hot pasta so it becomes soft and creamy.

Step 6: Finish and Serve

  • Top with grated parmesan cheese, fresh basil, and extra black pepper if desired. Serve immediately while warm.
