Ingredients

  • 1 pound fresh or store-bought gnocchi
  • 2 cups ripe tomatoes diced (or 1 14-oz can of high-quality canned tomatoes)
  • 2 balls of burrata cheese
  • 3 garlic cloves minced
  • ¼ cup fresh basil leaves torn
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Optional: 1/4 teaspoon red pepper flakes for heat

Instructions

Preparing the tomato sauce:

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  • Add minced garlic and sauté until fragrant, about 30 seconds.
  • Add diced tomatoes (or canned tomatoes) and simmer for 10-15 minutes until slightly thickened.
  • Season with salt, pepper, and red pepper flakes if using.

Cooking the gnocchi to perfection:

  • Bring a large pot of salted water to a boil.
  • Add gnocchi and cook according to package instructions (usually 2-3 minutes).
  • Drain the gnocchi, reserving 1/4 cup of pasta water.

Combining gnocchi with the sauce:

  • Add the cooked gnocchi to the skillet with the tomato sauce.
  • Gently toss to coat, adding a splash of reserved pasta water if needed to loosen the sauce.
  • Cook for an additional 1-2 minutes to let the flavors meld.

Adding the burrata topping:

  • Remove the skillet from heat.
  • Tear the burrata into pieces and dot them over the top of the gnocchi.

Garnishing and final touches:

  • Drizzle with remaining olive oil.
  • Sprinkle torn basil leaves over the dish.
  • Season with additional salt and pepper if desired.
