Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 cup fresh spinach
  • ½ cup sun-dried tomatoes chopped
  • 4 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions
 

  • Season the chicken breasts with salt, pepper, and Italian seasoning.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
  • In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  • Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer.
  • Add the Parmesan cheese and stir until melted and the sauce starts to thicken.
  • Toss in the sun-dried tomatoes and spinach, cooking until the spinach wilts.
  • Return the chicken to the skillet, spooning the sauce over it. Let it simmer for 2-3 minutes to reheat the chicken and meld the flavors.
