Ingredients
  

  • 500 g ground beef 80/20
  • 8 small flour tortillas
  • 8 slices American cheese or cheddar
  • 1 cup shredded lettuce
  • 1 medium tomato diced
  • ½ small onion thinly sliced
  • 16 pickle slices
  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp mustard
  • 1 tsp garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions
 

Preheat the pan

  • Heat a large skillet or griddle over high heat until very hot.

Prepare the beef

  • Divide the ground beef into 8 equal portions (about 60–70 g each).

Assemble the base

  • Press each portion of beef directly onto a tortilla, spreading it thin and evenly to cover the surface.

Season

  • Sprinkle salt, pepper, and garlic powder over the beef.

Cook beef-side down

  • Place the tortilla beef-side down onto the hot skillet. Press firmly with a spatula to “smash” it.

Sear

  • Cook for 2–3 minutes until the beef develops a crispy crust.

Flip and add cheese

  • Flip the taco and immediately place a slice of cheese on the beef.

Finish cooking

  • Cook for another 1–2 minutes until the cheese melts and the tortilla is lightly toasted.

Prepare the sauce

  • In a small bowl, mix mayonnaise, ketchup, and mustard.

Assemble tacos

  • Remove tacos from heat and top with lettuce, tomato, onion, pickles, and sauce.

Serve immediately

  • Enjoy while hot and crispy.
