Ingredients
  

  • 2 pounds beef chuck roast cut into 1.5-inch cubes
  • 3 cups sweet potatoes peeled and cut into large chunks
  • 1 cup carrots sliced
  • 1 cup celery chopped
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt plus more to taste
  • ½ teaspoon black pepper
  • 2 bay leaves
  • 2 tablespoons cornstarch optional, for thickening
  • 2 tablespoons water for cornstarch slurry
  • 2 tablespoons fresh parsley chopped (optional for garnish)

Instructions
 

Prep the ingredients:

  • Chop the sweet potatoes, carrots, celery, onion, and garlic. Cut the beef into cubes and pat dry with paper towels.

Optional browning step:

  • Heat a skillet over medium-high heat and sear the beef cubes on all sides for extra flavor. This step is optional but recommended.

Layer the Crockpot:

  • Add sweet potatoes, carrots, celery, and onions to the bottom.
  • Place the beef cubes on top of the vegetables.

Add seasonings and liquid:

  • Pour in the beef broth, tomato paste, Worcestershire sauce, garlic, smoked paprika, thyme, salt, pepper, and bay leaves.

Slow cook:

  • Cook on Low for 7 to 9 hours, or
  • Cook on High for 4 to 5 hours, until beef is tender and sweet potatoes are soft.

Thicken the stew (optional):

  • Mix cornstarch and cold water to create a slurry.
  • Stir into the Crockpot during the last 20 to 30 minutes of cooking to thicken the broth.

Finish and serve:

  • Remove bay leaves, taste and adjust seasonings, then garnish with fresh parsley before serving.
