2poundsboneless skinless chicken breasts or thighs
2bell peppersany color, cut into 1-inch pieces
1red onioncut into chunks
1zucchinisliced into thick rounds
Wooden or metal skewers
For the marinade:
½cuphoney
½cupbarbecue saucestore-bought or homemade
2tablespoonsolive oil
2tablespoonssoy sauce
1teaspoongarlic powder
1teaspoonsmoked paprika
Salt and black pepper to taste
Instructions
Prepare the chicken and vegetables
Cut chicken into 1 to 1.5-inch cubes. Chop your vegetables into similar-sized pieces for even cooking.
Make the marinade
In a large bowl, whisk together the honey, barbecue sauce, olive oil, soy sauce, garlic powder, paprika, salt, and pepper.
Marinate the chicken
Add the chicken to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 24 hours for maximum flavor.
