  • 1 cup cherry tomatoes halved
  • 1 cup cucumber thinly sliced
  • ½ cup red bell pepper thinly sliced
  • ½ cup yellow bell pepper thinly sliced
  • ¼ cup red onion thinly sliced
  • 1 cup baby spinach or romaine lettuce
