Ingredients

  • 1 lb ground turkey Choose 93% lean for a balance of flavor and moisture.
  • 4 oz mozzarella cheese Cut into small cubes for easy stuffing.
  • ½ cup breadcrumbs Panko or regular work well.
  • 1 large egg Acts as a binder to hold the mixture together.
  • ¼ cup grated Parmesan cheese For added umami flavor.
  • 2 garlic cloves minced – Fresh garlic adds bold flavor.
  • 2 tbsp fresh parsley chopped – Optional, but recommended for freshness.
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil If pan-frying.

Instructions

Prepare the Mozzarella:

  • Cut mozzarella into small cubes, approximately 1/2 inch in size. Set aside.

Mix the Meatball Base:

  • In a large bowl, combine ground turkey, breadcrumbs, egg, Parmesan, garlic, parsley, onion powder, Italian seasoning, salt, and pepper. Mix gently until all ingredients are just combined. Overmixing can make the meatballs tough.

Form the Meatballs:

  • Take about 2 tablespoons of the turkey mixture and flatten it slightly in your hand. Place a cube of mozzarella in the center and wrap the meat mixture around it, sealing the cheese completely. Roll into a ball. Repeat until all the mixture is used.

Chill (Optional):

  • Place the meatballs on a tray and refrigerate for 15-20 minutes. This helps them hold their shape during cooking.

Choose Your Cooking Method:

  • Baking (Healthiest Option): Preheat your oven to 400°F (200°C). Place the meatballs on a baking sheet lined with parchment paper and bake for 18-20 minutes, or until the internal temperature reaches 165°F (74°C).
  • Pan-Frying (Crispiest Option): Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the meatballs in batches, cooking for 2-3 minutes per side until browned. Transfer to a baking dish and finish cooking in a 375°F oven for 10 minutes.
  • Air Frying (Quickest Option): Preheat your air fryer to 375°F. Place the meatballs in a single layer in the air fryer basket. Cook for 12-14 minutes, shaking the basket halfway through.

Notes

Substitutions:
