Ingredients

  • 1 loaf French or Italian bread
  • 2 cups shredded Monterey Jack or Cheddar cheese or a mix
  • 1 cup green olives chopped
  • ½ cup black olives chopped
  • ½ cup mayonnaise
  • 2 cloves garlic minced (optional)
  • 1 tablespoon fresh parsley chopped (optional)

Instructions

  • Preheat your oven to 375°F (190°C). Line a baking sheet with foil or parchment paper.

Prepare the filling:

  • In a medium mixing bowl, combine the shredded cheese, chopped green and black olives, mayonnaise, minced garlic, and parsley. Stir until everything is evenly mixed.

Slice the bread:

  • Cut the loaf in half lengthwise and place both halves cut-side up on the prepared baking sheet.

Spread the mixture:

  • Evenly distribute the olive cheese mixture over the two halves of the bread, spreading it all the way to the edges.

Bake:

  • Place in the oven and bake for 15–18 minutes, or until the cheese is melted and the top is bubbly and golden brown.

Broil for extra crispness (optional):

  • Broil on high for 1–2 minutes if you want a crispy, slightly browned top. Watch carefully to avoid burning.

Cool and serve:

  • Remove from the oven, let sit for a couple of minutes, then slice into pieces and serve warm.
