Ingredients
  

  • 450 g large shrimp peeled and deveined
  • 300 g smoked sausage sliced
  • 500 g baby potatoes halved
  • 2 ears corn cut into 4 pieces each
  • 4 tablespoons butter melted
  • 4 cloves garlic minced
  • 2 tablespoons Old Bay seasoning or Cajun seasoning
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 lemon sliced
  • 2 tablespoons fresh parsley chopped

Instructions
 

Preheat and prep

  • Preheat oven to 200°C (400°F) or preheat grill to medium-high heat.

Parboil the potatoes

  • Bring a pot of salted water to a boil and cook the potatoes for 8–10 minutes until slightly tender. Drain and set aside.

Prepare foil sheets

  • Cut 4 large sheets of aluminum foil and lightly grease them or spray with cooking spray.

Assemble the packets

  • Evenly divide the potatoes, corn, sausage, and shrimp among the foil sheets.

Add seasoning

  • Drizzle melted butter over each portion. Add garlic, Old Bay seasoning, paprika, salt, and pepper. Toss gently to coat.

Add lemon

  • Place lemon slices on top of each packet.

Seal the packets

  • Fold the foil over the ingredients and seal tightly to create closed packets.

Cook

  • Oven: Place packets on a baking sheet and bake for 20–25 minutes.
  • Grill: Place directly on grill grates and cook for 10–15 minutes, flipping halfway.

Check doneness

  • Carefully open one packet. Shrimp should be pink and opaque, and potatoes tender.

Garnish and serve

  • Sprinkle with fresh parsley and serve immediately.
