Ingredients
  

For the Stir Fry:

  • 1 pound boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • 3 cups fresh broccoli florets
  • 2 tablespoons olive oil or sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated

For the Teriyaki Sauce:

  • ½ cup low-sodium soy sauce
  • 3 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water slurry
  • 1 tablespoon brown sugar optional for added sweetness

  • Sliced carrots

  • Crushed red pepper flakes for heat

Instructions
 

Step 1: Prepare the Sauce

  • In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and brown sugar until smooth. Set aside.

Step 2: Cook the Chicken

  • Heat olive oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook for 5–6 minutes, stirring occasionally, until golden brown and cooked through. Remove the chicken from the pan and set aside.

Step 3: Stir Fry the Vegetables

  • In the same pan, add a bit more oil if needed. Add the garlic, ginger, and broccoli florets. Stir fry for about 3–4 minutes, or until the broccoli is bright green and tender-crisp.

Step 4: Combine and Add Sauce

  • Return the chicken to the pan. Pour in the prepared teriyaki sauce and the cornstarch slurry. Stir constantly as the sauce thickens and coats the chicken and broccoli, about 2–3 minutes.

Step 5: Serve and Enjoy

  • Serve hot over white rice, brown rice, noodles, or cauliflower rice. Garnish with sesame seeds or sliced green onions if desired.
