8cupschopped kaleabout 1 large bunch, stems removed
2medium ripe avocadosdiced
3tablespoonsfresh lemon juice
1teaspoonlemon zest
3tablespoonsolive oil
1small garlic cloveminced
½teaspoonsaltor to taste
¼teaspoonblack pepperor to taste
Instructions
Wash the kale thoroughly, remove the tough stems, and chop the leaves into bite-sized pieces. Place the kale in a large bowl.
Add 1 tablespoon of the olive oil and 1 tablespoon of the lemon juice to the kale. Massage the kale with clean hands for 1–2 minutes until it becomes darker in color and noticeably softer.
In a small bowl, whisk together the remaining lemon juice, olive oil, lemon zest, minced garlic, salt, and black pepper until well combined.
Pour the dressing over the massaged kale and toss until evenly coated.
Gently fold in the diced avocado, being careful not to mash it.
