Ingredients
  

  • 8 cups chopped kale about 1 large bunch, stems removed
  • 2 medium ripe avocados diced
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 3 tablespoons olive oil
  • 1 small garlic clove minced
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste

Instructions
 

  • Wash the kale thoroughly, remove the tough stems, and chop the leaves into bite-sized pieces. Place the kale in a large bowl.
  • Add 1 tablespoon of the olive oil and 1 tablespoon of the lemon juice to the kale. Massage the kale with clean hands for 1–2 minutes until it becomes darker in color and noticeably softer.
  • In a small bowl, whisk together the remaining lemon juice, olive oil, lemon zest, minced garlic, salt, and black pepper until well combined.
  • Pour the dressing over the massaged kale and toss until evenly coated.
  • Gently fold in the diced avocado, being careful not to mash it.
  • Taste and adjust seasoning as needed. Serve immediately.
