Ingredients
  

  • 8 ounces pasta penne, rigatoni, or spaghetti
  • 1 tablespoon olive oil
  • 12 ounces smoked or Italian sausage sliced
  • 3 tablespoons unsalted butter
  • 4 cloves garlic minced
  • ½ teaspoon red pepper flakes optional, for spice
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ½ cup reserved pasta water
  • ½ cup grated parmesan cheese
  • 2 tablespoons fresh parsley chopped (for garnish)

Instructions
 

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Cook the pasta according to package instructions until al dente.
  • Reserve ½ cup of pasta water before draining.

Step 2: Sauté the Sausage

  • Heat a large skillet over medium heat and add a drizzle of olive oil.
  • Slice the sausage into bite-sized pieces and add them to the pan.
  • Cook for about 5-7 minutes until browned and crispy. Remove from the pan and set aside.

Step 3: Make the Garlic Butter Sauce

  • In the same skillet, reduce heat to low and add the butter.
  • Once melted, add minced garlic and sauté for about 1 minute until fragrant.
  • Stir in red pepper flakes, Italian seasoning, and black pepper.

Step 4: Combine Everything

  • Add the cooked pasta and reserved pasta water to the skillet.
  • Toss everything together until the pasta is coated in the garlic butter sauce.
  • Return the sausage to the pan and mix well.
  • Sprinkle with grated parmesan and fresh parsley before serving.
