Ingredients
  

For the Salad:

  • 4 ripe peaches halved and pitted
  • 1 cup fresh blueberries
  • 4 cups mixed greens such as arugula, spinach, or spring mix
  • ¼ cup crumbled feta cheese optional
  • ¼ cup toasted pecans or walnuts roughly chopped

For the Dressing:

  • ¼ cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • Prepare the Grill:
    Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
  • Grill the Peaches:
    Brush the cut sides of the peach halves with a little olive oil.
    Place the peaches cut-side down on the preheated grill. Grill for about 3-4 minutes until they have nice grill marks and are slightly softened.
    Remove from the grill and let cool slightly. Slice each half into wedges.
  • Make the Dressing:
    In a small bowl or a jar with a lid, combine the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Whisk or shake until well combined.
  • Assemble the Salad:
    In a large salad bowl, add the mixed greens. Top with the grilled peach wedges, fresh blueberries, crumbled feta cheese (if using), and toasted nuts.
  • Dress the Salad:
    Drizzle the dressing over the salad. Toss gently to combine, ensuring all the ingredients are evenly coated with the dressing.
  • Serve:
    Serve the salad immediately as a refreshing and delicious appetizer, side dish, or light lunch.
