Ingredients
  

For the Portobello Mushrooms:

  • 4 large portobello mushroom caps stems removed
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • Salt and pepper to taste

For the Burger Assembly:

  • 4 whole grain burger buns
  • 4 slices of Swiss cheese optional
  • 1 large tomato sliced
  • 1 red onion sliced
  • Lettuce leaves
  • Mustard ketchup, or your favorite burger condiments

Instructions
 

  • Prepare the Portobello Mushrooms:
    In a shallow dish, whisk together the balsamic vinegar, olive oil, minced garlic, salt, and pepper. Place the portobello mushroom caps in the marinade, turning to coat evenly. Let them marinate for at least 30 minutes, flipping them halfway through if possible.
  • Preheat the Grill:
    Preheat your grill to medium-high heat. If you don't have a grill, you can also use a grill pan or skillet on the stovetop.
  • Grill the Mushrooms:
    Once the grill is hot, place the marinated portobello mushroom caps on the grill, gill side down. Grill for about 5-7 minutes on each side, or until the mushrooms are tender and have grill marks. If using cheese, place a slice on each mushroom during the last minute of grilling to melt.
  • Toast the Burger Buns:
    While the mushrooms are grilling, lightly toast the whole grain burger buns on the grill for a minute or two, until they are warmed through and lightly golden brown.
  • Assemble the Burgers:
    Place a grilled portobello mushroom cap on the bottom half of each burger bun. Top with sliced tomato, red onion, lettuce leaves, and any desired condiments such as mustard or ketchup. Place the top half of the burger bun on top.
  • Serve:
