For the Quesadillas:
- 8 large flour tortillas
- 2 cups shredded Mexican blend cheese cheddar and Monterey Jack
- 1 cup diced tomatoes
- 1 cup sliced green onions
- 1 cup sliced black olives optional
- Sour cream and salsa for serving
