Ingredients
  

For the Bowl:

  • 1 lb ground turkey preferably 93% lean
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon grated fresh ginger
  • 2 cups cooked rice white, brown, or cauliflower rice
  • 2 cups mixed vegetables e.g., broccoli florets, bell peppers, shredded carrots
  • 2 green onions sliced (for garnish)
  • 1 tablespoon sesame seeds for garnish
  • ¼ teaspoon red pepper flakes optional, for heat

For the Homemade Teriyaki Sauce (Optional):

  • ¼ cup low-sodium soy sauce or tamari for gluten-free
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 clove garlic minced
  • ½ teaspoon grated fresh ginger
  • 1 teaspoon cornstarch
  • 1 tablespoon water for cornstarch slurry

Instructions
 

Step 1: Make the Teriyaki Sauce (Optional)

  • In a small saucepan, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
  • Bring to a simmer over medium heat.
  • Stir in the cornstarch mixed with water.
  • Cook until the sauce thickens, about 2–3 minutes. Set aside.

Step 2: Cook the Rice

  • Cook rice according to package directions. Fluff and set aside.

Step 3: Cook the Ground Turkey

  • Heat sesame oil in a large skillet over medium heat.
  • Add ground turkey and cook until browned, breaking it up with a spoon, about 5–7 minutes.
  • Stir in garlic and ginger. Cook for another minute.

Step 4: Add the Vegetables

  • Add the mixed vegetables to the skillet with the turkey.
  • Stir-fry for 5–6 minutes until vegetables are tender-crisp.

Step 5: Add Sauce

  • Pour in the homemade or store-bought teriyaki sauce.
  • Stir well to coat the turkey and veggies. Let simmer for 2–3 minutes.

Step 6: Assemble the Bowls

  • Divide cooked rice between 4 bowls.
  • Top with the teriyaki turkey and vegetable mixture.
  • Garnish with green onions, sesame seeds, and red pepper flakes if desired.
