Ingredients
  

  • 1 pound ground beef or turkey for a leaner option
  • 1 large onion diced
  • 3 cloves garlic minced
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz pumpkin puree
  • 1 can 14.5 oz diced tomatoes
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon pumpkin pie spice
  • Salt and pepper to taste

Optional toppings:

  • Sour cream
  • Shredded cheddar cheese
  • Chopped fresh cilantro
  • Sliced jalapeños

Instructions
 

  • In a large pot or Dutch oven, brown the ground beef over medium heat. Drain any excess fat.
  • Add diced onions and minced garlic to the pot. Sauté until the onions are translucent and fragrant.
  • Stir in the kidney beans, black beans, pumpkin puree, and diced tomatoes.
  • Pour in the beef broth and mix well.
  • Add chili powder, cumin, pumpkin pie spice, salt, and pepper. Stir to combine all ingredients thoroughly.
  • Bring the chili to a boil, then reduce heat and let it simmer for about 30-40 minutes, stirring occasionally.
  • Taste and adjust seasoning as needed. If the chili is too thick, add a bit more broth. If it's too thin, let it simmer uncovered for a few more minutes.

Notes

Pro tip: While canned pumpkin puree works great, you can also use fresh pumpkin for an extra special touch. Simply roast and puree your own pumpkin for that homemade flavor!
