Bring the mixture to a simmer.Stir in the shredded cheddar and Monterey Jack cheeses until melted and smooth.If you prefer a thicker sauce, add the cornstarch mixture and cook for an additional 2-3 minutes until the sauce has thickened.
Combine and Bake:Return the chicken breasts to the skillet, spooning some of the sauce over the top.Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
Garnish and Serve:Remove the skillet from the oven and let the chicken rest for a few minutes.Garnish with chopped fresh cilantro before serving.
