Ingredients
  

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter melted

For the Filling:

  • 3 8-ounce packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • ½ cup key lime juice freshly squeezed if possible
  • 1 tablespoon key lime zest from about 4-5 key limes
  • 1 teaspoon vanilla extract

For the Topping (optional):

  • 1 cup whipped cream
  • Key lime slices for garnish

Instructions
 

  • Preheat the Oven:
    Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan with butter or non-stick cooking spray.
  • Make the Crust:
    In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined.
    Press the mixture firmly into the bottom of the prepared springform pan, using the back of a spoon or your fingers to create an even crust.
    Bake the crust in the preheated oven for 10 minutes. Remove from the oven and set aside to cool while you prepare the filling.
  • Make the Filling:
    In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.
    Add the eggs one at a time, mixing well after each addition.
    Stir in the key lime juice, key lime zest, and vanilla extract until fully incorporated and the mixture is smooth.
  • Assemble and Bake:
    Pour the filling over the cooled crust in the springform pan, spreading it out evenly with a spatula.
    Tap the pan gently on the counter to release any air bubbles.
    Bake the cheesecake in the preheated oven for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
    Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.
  • Chill and Serve:
    Remove the cheesecake from the oven and let it cool completely at room temperature.
    Once cooled, cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to set.
    Before serving, garnish with whipped cream and key lime slices if desired.
