Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs (about 6–8 thighs)
  • ¼ cup olive oil
  • 3 tbsp fresh lemon juice about 1 large lemon
  • 1 tbsp lemon zest
  • 3 cloves garlic minced
  • 1 tbsp fresh rosemary chopped (or 1 tsp dried)
  • 1 tbsp fresh thyme leaves or 1 tsp dried
  • 2 tbsp fresh parsley chopped
  • 1 tsp salt
  • ½ tsp black pepper

Optional:

  • 1 tsp Dijon mustard
  • 1 tsp honey
  • ½ tsp red pepper flakes

Instructions
 

Prepare the Marinade:

  • In a large bowl or zip-top bag, whisk together olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, parsley, salt, and pepper. Add optional ingredients like Dijon mustard, honey, or red pepper flakes if using.

Marinate the Chicken:

  • Add the chicken thighs to the marinade. Toss until fully coated. Seal or cover and refrigerate for at least 30 minutes (up to 8 hours for more flavor).

Preheat the Grill:

  • Heat your gas or charcoal grill to medium-high heat. Clean and oil the grates to prevent sticking.
