Using a spiralizer, create zucchini noodles. If you don't have a spiralizer, use a julienne peeler or regular vegetable peeler to create long strips.
Pat the zucchini noodles dry with paper towels to remove excess moisture.
Heat olive oil in a large skillet over medium heat.
Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
Add the zucchini noodles to the skillet and cook for 1-2 minutes, tossing gently with tongs to ensure even cooking.
Remove the skillet from heat and add grated Parmesan cheese, red pepper flakes (if using), salt, and black pepper. Toss to combine.
Transfer to serving plates and garnish with fresh parsley.
