Ingredients
  

  • 2 medium zucchinis
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • ¼ cup freshly grated Parmesan cheese
  • ¼ teaspoon red pepper flakes optional
  • Salt and black pepper to taste
  • 1 tablespoon fresh parsley chopped (for garnish)

Instructions
 

  • Wash and dry the zucchinis. Cut off the ends.
  • Using a spiralizer, create zucchini noodles. If you don't have a spiralizer, use a julienne peeler or regular vegetable peeler to create long strips.
  • Pat the zucchini noodles dry with paper towels to remove excess moisture.
  • Heat olive oil in a large skillet over medium heat.
  • Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  • Add the zucchini noodles to the skillet and cook for 1-2 minutes, tossing gently with tongs to ensure even cooking.
  • Remove the skillet from heat and add grated Parmesan cheese, red pepper flakes (if using), salt, and black pepper. Toss to combine.
  • Transfer to serving plates and garnish with fresh parsley.
  • Serve immediately and enjoy your low-carb zucchini noodle dish!
