Ingredients
  

For the Mango Cheesecake Layer:

  • 2 ripe mangoes peeled and diced
  • 1 tablespoon lemon juice
  • 16 ounces 2 packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream

For the Trifle Assembly:

  • 1 package 10-12 ounces ladyfinger cookies or sponge cake, cut into cubes
  • 1 cup mango puree optional, for extra mango flavor
  • Fresh mango slices for garnish
  • Whipped cream for garnish
  • Mint leaves for garnish

Instructions
 

  • Prepare the Mango Cheesecake Layer:
    In a blender or food processor, puree one of the diced mangoes with lemon juice until smooth. Set aside.
    In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
    Add the powdered sugar and vanilla extract to the cream cheese, and beat until well combined.
    In a separate bowl, whip the heavy cream until stiff peaks form.
    Gently fold the whipped cream into the cream cheese mixture until smooth.
    Fold in the mango puree until evenly distributed. Reserve some diced mango for garnish.
  • Assemble the Trifle:
    In a trifle dish or individual serving glasses, layer the bottom with ladyfinger cookies or sponge cake cubes.
    Drizzle some mango puree (if using) over the cookies/cake to moisten them slightly.
    Spoon a layer of the mango cheesecake mixture over the cookies/cake, spreading it evenly.
    Repeat the layers until you reach the top of the trifle dish or glasses, ending with a layer of the mango cheesecake mixture.
  • Decorate and Chill:
    Garnish the top of the trifle with fresh mango slices, reserved diced mango, whipped cream, and mint leaves for a fresh and vibrant presentation.
    Cover the trifle dish or glasses with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the trifle to set.
  • Serve:
