Ingredients
  

For the salmon:

  • 4 fresh salmon fillets skin-on or skinless
  • Salt and freshly ground black pepper to taste
  • ¼ teaspoon red pepper flakes optional, for heat

For the glaze:

  • cup pure maple syrup not pancake syrup
  • ¼ cup bourbon mid-range quality works best
  • 2 tablespoons low-sodium soy sauce
  • 2 garlic cloves minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil

Instructions
 

Prep the glaze

  • In a small bowl, whisk together maple syrup, bourbon, soy sauce, garlic, and lemon juice. Set aside.

Season the salmon

  • Pat the salmon fillets dry with paper towels. Sprinkle evenly with salt, pepper, and red pepper flakes if using.

Sear the salmon

  • Heat olive oil in a large skillet over medium-high heat. Place the salmon skin-side down and cook for 3-4 minutes until the skin is crisp. Flip and cook for another 2-3 minutes.

Add the glaze

  • Pour the maple bourbon mixture into the skillet. Reduce the heat to medium and let the glaze simmer, spooning it over the salmon until it thickens and coats the fish, about 3-4 minutes.

Serve

  • Transfer the salmon to plates, drizzle with extra glaze from the pan, and serve immediately.
