  • 1 pound ground beef 80/20 or lean
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 packet taco seasoning or homemade blend
  • 1 tablespoon tomato paste
  • ½ cup beef broth or water
  • Juice of 1 lime

For the Wraps & Toppings:

  • 1 head romaine or butter lettuce leaves separated and washed
  • ½ cup diced tomatoes
  • 1 avocado sliced
  • ½ cup shredded cheese, cheddar, Monterey Jack, or cotija
  • ¼ cup sour cream or Greek yogurt
  • ¼ cup chopped fresh cilantro
  • 1 jalapeño thinly sliced (optional)
  • Lime wedges for serving

Instructions
 

Step 1: Cook the Ground Beef

  • Heat a large skillet over medium heat and add the olive oil.
  • Add the chopped onion and sauté for 2-3 minutes until softened.
  • Stir in the minced garlic and cook for another 30 seconds.
  • Add the ground beef and break it up with a spatula. Cook until browned, about 5-7 minutes.
  • Drain any excess grease, then stir in the taco seasoning, tomato paste, and beef broth.
  • Let the mixture simmer for 5 minutes until thickened.
  • Squeeze fresh lime juice over the beef and stir.

Step 2: Prepare the Lettuce Wraps

  • While the beef is cooking, rinse and dry the lettuce leaves.
  • Choose sturdy leaves that can hold the filling without breaking.

Step 3: Assemble the Wraps

  • Spoon the seasoned beef into each lettuce leaf.
  • Top with diced tomatoes, avocado slices, shredded cheese, and any other preferred toppings.
  • Drizzle with sour cream or Greek yogurt.
  • Garnish with chopped cilantro and sliced jalapeños.
