Ingredients

  • 1 medium russet potato
  • Olive oil optional, for crispy skin
  • Kosher or sea salt optional, for crispy skin

Optional toppings:

  • butter, sour cream, shredded cheese, green onions, Greek yogurt, chili, bacon bits, etc.

Instructions

  • Wash and prep: Scrub the potato thoroughly under running water and dry it with a towel. Use a fork to poke holes all over the potato (about 5–6 times) to allow steam to escape.
  • Microwave: Place the potato on a microwave-safe plate. Microwave on high for 4–5 minutes, then flip it over and microwave for another 3–5 minutes, until the potato is fork-tender and fully cooked.
  • Optional crispy, salty skin finish: If you prefer a crispier texture, preheat your oven to 425°F (220°C). Rub the cooked potato with olive oil and sprinkle generously with kosher or sea salt. Place it directly on the oven rack or a baking sheet and bake for 10–15 minutes, until the skin is golden and crisp.
  • Rest and slice: Let the potato rest for 1–2 minutes to finish steaming internally. Slice it open, fluff the inside with a fork, and add your favorite toppings. Serve warm.
