Nachos

  • 10 oz thick-cut tortilla chips
  • 1 cup cooked ground beef or shredded chicken optional
  • ½ cup sliced jalapeños
  • ½ cup diced tomatoes
  • ¼ cup sliced black olives
  • ¼ cup diced red onion

Beer Cheese Sauce

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • ½ cup beer lager or pale ale recommended
  • 2 cups freshly shredded sharp cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp mustard powder
  • Salt to taste
  • Optional: pinch of cayenne pepper for heat

Instructions
 

Prepare the Cheese Sauce Base

  • Melt the butter in a medium saucepan over medium heat. Once melted, whisk in the flour and cook for about 1 minute, stirring constantly, until lightly golden.

Add Liquids

  • Slowly whisk in the milk, followed by the beer. Continue whisking until the mixture thickens slightly, about 3–4 minutes.

Melt the Cheese

  • Reduce heat to low. Gradually add the shredded cheeses, stirring constantly until fully melted and smooth.

Season the Sauce

  • Stir in garlic powder, onion powder, mustard powder, salt, and cayenne if using. Remove from heat and set aside, keeping warm.

Assemble the Nachos

  • Preheat oven to 400°F (200°C). Spread tortilla chips in an even layer on a large baking sheet. Add protein if using, then sprinkle with jalapeños, tomatoes, olives, and red onion.

Bake

  • Bake for 8–10 minutes, just until toppings are heated and chips are lightly toasted.

Finish and Serve
