No Bake Berry Cream Pie

This pie is perfect for any occasion, especially during the warmer months when you crave something cool and fruity. Feel free to customize it with your favorite berries or even a mix of tropical fruits for a delicious twist!

Ingredients
  

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • 6 tablespoons melted butter
  • 3 tablespoons granulated sugar

For the Filling:

  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups heavy cream
  • 2 cups mixed berries such as strawberries, blueberries, raspberries, washed and dried
  • Extra berries for topping optional

Instructions
 

  • Prepare the Crust:
    In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture resembles wet sand and holds together when pressed.
  • Press the Crust:
    Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie dish, using the back of a spoon or your fingers. Make sure the crust is evenly distributed and firmly packed. Place the crust in the refrigerator to chill while you prepare the filling.
  • Make the Filling:
    In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
    Add the powdered sugar and vanilla extract to the cream cheese and beat until well combined and smooth.
    In a separate bowl, whip the heavy cream until stiff peaks form.
    Gently fold the whipped cream into the cream cheese mixture until fully combined and smooth.
  • Assemble the Pie:
    Remove the prepared crust from the refrigerator.
    Spread a layer of the cream cheese mixture evenly over the bottom of the crust.
    Arrange the mixed berries on top of the cream cheese layer. You can arrange them in any pattern you like or simply scatter them evenly.
    Repeat with another layer of the cream cheese mixture over the berries, smoothing it out with a spatula.
    Top the pie with extra berries if desired for garnish.
  • Chill and Serve:
    Cover the pie with plastic wrap or aluminum foil and refrigerate for at least 4 hours, or until set.
