- 1 package 14.3 oz graham crackers
- ½ cup unsalted butter melted
- ¼ cup granulated sugar
For the Cream Cheese Filling:
- 2 packages 8 oz each cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream cold
- For the Strawberry Layer:
- 4 cups fresh strawberries hulled and sliced
- ¼ cup granulated sugar
For the Topping:
- 1 cup whipped cream or whipped topping
- Fresh strawberries sliced, for garnish
Prepare the Crust:In a food processor, pulse the graham crackers until finely ground. Add the melted butter and granulated sugar, and pulse until the mixture resembles wet sand.Press the mixture into the bottom of a 9x13-inch baking dish in an even layer. Place the dish in the refrigerator to chill while you prepare the filling. Make the Cream Cheese Filling:In a large mixing bowl, beat the softened cream cheese until smooth and creamy.Add the powdered sugar and vanilla extract, and beat until well combined and smooth.In a separate bowl, whip the cold heavy cream until stiff peaks form.Gently fold the whipped cream into the cream cheese mixture until fully combined and smooth. Assemble the Layers:Spread half of the cream cheese filling over the chilled graham cracker crust, smoothing it into an even layer.In a separate bowl, toss the sliced strawberries with granulated sugar until coated. Arrange the strawberry slices evenly over the cream cheese layer.Spread the remaining cream cheese filling over the strawberries, smoothing it into an even layer.
