1lbboneless skinless chicken thighs(or 2 large chicken breasts)
2medium sweet potatoespeeled and diced into 1-inch cubes
1medium oniondiced
3clovesgarlicminced
1teaspoonpaprika
1teaspoonground cumin
1teaspoonsaltadjust to taste
½teaspoonblack pepper
¼teaspoonchili flakesoptional
2tablespoonsolive oil
1teaspoonfresh thyme or rosemarychopped (plus extra for garnish)
1tablespoonlemon juiceoptional, for garnish
Instructions
Prepare the Chicken
Pat the chicken dry with a paper towel.
Season both sides with paprika, cumin, salt, and pepper.
Sear the Chicken
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the chicken and cook for 4-5 minutes per side until golden brown but not fully cooked through.
Remove the chicken from the skillet and set it aside.
Cook the Sweet Potatoes
Add the remaining olive oil to the skillet.
Toss in the diced sweet potatoes and cook for 7-10 minutes, stirring occasionally, until they start to soften and caramelize.
