  • 1 pound shrimp peeled and deveined
  • 2 medium zucchinis spiralized into noodles
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon red pepper flakes optional, for heat
  • Juice and zest of 1 lemon
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup Parmesan cheese optional, for garnish
  • 2 tablespoons fresh parsley chopped

Instructions
 

Step 1: Prep the Ingredients

  • Spiralize the zucchinis or use pre-cut zucchini noodles.
  • Pat shrimp dry with paper towels and season with salt and pepper.

Step 2: Cook the Shrimp

  • Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium heat.
  • Add shrimp, minced garlic, and red pepper flakes.
  • Cook for 2-3 minutes per side until shrimp are pink and opaque.
  • Remove shrimp from the pan and set aside.

Step 3: Sauté the Zucchini Noodles

  • In the same pan, add the remaining 1 tablespoon olive oil.
  • Toss in the zucchini noodles and cook for 1-2 minutes, stirring occasionally.
  • Be careful not to overcook, as they can become mushy.

Step 4: Combine and Serve

  • Return shrimp to the pan and add lemon juice, zest, and Parmesan cheese (if using).
  • Toss everything together until well coated.
  • Remove from heat, garnish with fresh parsley, and serve immediately.
