Ingredients
  

  • 4 ripe peaches pitted and sliced
  • 6 cups fresh arugula
  • ½ cup crumbled goat cheese or feta cheese
  • ¼ cup toasted pecans or walnuts
  • ¼ red onion thinly sliced
  • ¼ cup fresh basil leaves torn (optional)

For the Dressing:

  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • Prepare the Dressing:

    In a large bowl, combine the arugula, sliced peaches, crumbled goat cheese (or feta), toasted pecans (or walnuts), and red onion. If using basil, add it in now as well.
  • Toss the Salad:
