Ingredients
  

For the Brownies:

  • ½ cup unsalted butter melted
  • 1 cup granulated sugar
  • ½ cup brown sugar packed
  • ¾ cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 large eggs
  • 1 teaspoon peppermint extract
  • ½ cup chocolate chips optional for extra chocolate flavor

For the Topping:

  • 1 ½ cups mini marshmallows
  • ¼ cup crushed peppermint candies optional for extra crunch and minty flavor

Instructions
 

Preheat the Oven & Prepare the Pan:

  • Preheat your oven to 350°F (175°C).
  • Grease an 8x8-inch baking pan or line it with parchment paper to easily remove the brownies after baking.

Mix the Dry Ingredients:

  • In a medium bowl, combine flour, cocoa powder, baking powder, and salt. Stir well to ensure everything is evenly distributed.

Make the Brownie Batter:

  • In a separate large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
  • Add the eggs, one at a time, whisking after each addition until fully combined.
  • Stir in the peppermint extract.

Combine Wet and Dry Ingredients:

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • If you’re using chocolate chips, fold them into the batter now.

Bake the Brownies:

  • Pour the brownie batter into the prepared pan, spreading it evenly.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

Add the Marshmallow Topping:

  • Once the brownies are done baking, remove them from the oven.
  • Immediately top with mini marshmallows, spreading them evenly across the surface.
  • Return the pan to the oven for 2-3 minutes or until the marshmallows puff up and begin to turn golden brown.

Cool and Serve:

  • Let the brownies cool in the pan for at least 15 minutes before cutting them into squares.
  • If desired, sprinkle crushed peppermint candies on top of the marshmallows for an extra festive touch.
