- 2 pounds Potatoes Yukon Gold or Russet
- 1 bulb Garlic
- 4 tbsp Butter unsalted
- ½ Cup Heavy Cream or milk for a lighter version
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper to taste
- Fresh Herbs optional: 1 tablespoon (optional:)
- 1 tbsp Fresh Herbs (optional): chopped chives, parsley, or thyme
Prepare the Garlic:
Preheat your oven to 400°F (200°C).
Slice the top off the bulb of garlic to expose the cloves. Drizzle with olive oil, wrap in aluminum foil, and roast for 30-35 minutes until soft and caramelized.
Prepare the Potatoes:
While the garlic is roasting, peel and cut the potatoes into even chunks (about 1-2 inches).
Place the potatoes in a large pot and cover with cold, salted water.
Boil the Potatoes:
Bring the pot to a boil over medium-high heat. Cook until the potatoes are fork-tender, about 15-20 minutes.
Drain the potatoes in a colander.
