Ingredients
  

  • 2 pounds Potatoes Yukon Gold or Russet
  • 1 bulb Garlic
  • 4 tbsp Butter unsalted
  • ½ Cup Heavy Cream or milk for a lighter version
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • Fresh Herbs optional: 1 tablespoon (optional:)
  • 1 tbsp Fresh Herbs (optional): chopped chives, parsley, or thyme

Instructions
 

Prepare the Garlic:

  • Preheat your oven to 400°F (200°C).
  • Slice the top off the bulb of garlic to expose the cloves. Drizzle with olive oil, wrap in aluminum foil, and roast for 30-35 minutes until soft and caramelized.

Prepare the Potatoes:

  • While the garlic is roasting, peel and cut the potatoes into even chunks (about 1-2 inches).
  • Place the potatoes in a large pot and cover with cold, salted water.

Boil the Potatoes:

  • Bring the pot to a boil over medium-high heat. Cook until the potatoes are fork-tender, about 15-20 minutes.
  • Drain the potatoes in a colander.

Mash the Potatoes:

  • Return the drained potatoes to the pot. Mash using a potato masher or ricer until smooth.

Add the Ingredients:

  • Squeeze the roasted garlic out of the skins and into the mashed potatoes. Add the butter and heavy cream.
  • Stir until well combined. Season with salt and pepper to taste.

Adjust Consistency:

  • If you prefer creamier potatoes, add more cream or milk gradually until you reach your desired consistency.

Finish and Serve:

  • Fold in any fresh herbs if using. Transfer to a serving dish and enjoy!
