Ingredients
  

  • 2 medium zucchini sliced into rounds
  • 2 medium yellow squash sliced into rounds
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese optional
  • Fresh parsley chopped, for garnish (optional)

Instructions
 

  • Preheat the Oven:
    Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.
  • Prepare the Zucchini and Squash:
    Wash the zucchini and squash under cold water and pat them dry with a clean kitchen towel. Trim off the ends and slice them into rounds, about 1/4 inch thick.
  • Season the Vegetables:
    In a large mixing bowl, combine the zucchini and squash rounds with olive oil, minced garlic, dried thyme, dried oregano, salt, and pepper. Toss until the vegetables are evenly coated with the seasoning.
  • Roast in the Oven:
    Spread the seasoned zucchini and squash rounds in a single layer on the prepared baking sheet. Make sure they are not overcrowded to allow for even roasting.
    Roast in the preheated oven for 20-25 minutes, flipping halfway through, or until the vegetables are tender and golden brown around the edges.
  • Optional Toppings:
    If desired, sprinkle grated Parmesan cheese over the roasted zucchini and squash during the last 5 minutes of baking. The cheese will melt and create a delicious savory crust on the vegetables.
  • Garnish and Serve:
    Once roasted to perfection, remove the zucchini and squash from the oven and transfer them to a serving platter. Garnish with freshly chopped parsley for a pop of color and added freshness.
