Ingredients
  

  • ½ lb cooked shrimp peeled, deveined, and chopped
  • ¼ cup mayonnaise
  • 1 tablespoon Greek yogurt optional, for extra creaminess
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
  • 4 slices of bread your choice of bread
  • ½ cucumber thinly sliced
  • Lettuce leaves optional, for serving

Instructions
 

  • Prepare the Shrimp Salad:
    In a mixing bowl, combine the chopped cooked shrimp, mayonnaise, Greek yogurt (if using), chopped dill, chopped chives, and lemon juice. Stir until well combined.
    Season the shrimp salad with salt and black pepper to taste. Adjust the seasoning according to your preference.
  • Assemble the Sandwiches:
    Place the slices of bread on a clean work surface.
    Divide the shrimp salad mixture evenly among two slices of bread, spreading it out in an even layer.
    Arrange the thinly sliced cucumber on top of the shrimp salad.
    If desired, add lettuce leaves on top of the cucumber for extra crunch and freshness.
    Top each sandwich with the remaining slices of bread to form sandwiches.
  • Serve:
    Cut each sandwich in half diagonally or serve whole.
