Ingredients
  

For the Pasta

  • 12 oz fettuccine, penne, or any sturdy pasta (cooked al dente)
  • ½ cup reserved pasta water

For the Shrimp Scampi Sauce

  • 2 tbsp unsalted butter
  • 4 cloves garlic minced
  • ½ cup white wine or chicken broth
  • 2 tbsp fresh lemon juice
  • ¼ tsp red pepper flakes optional
  • 1 lb large shrimp peeled and deveined
  • ½ tsp salt
  • ¼ tsp black pepper

For the Bake

  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley for garnish

Instructions
 

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Cook the pasta according to package instructions until al dente.
  • Reserve ½ cup of pasta water, then drain and set aside.

Step 2: Prepare the Shrimp Scampi Sauce

  • In a large skillet, melt butter over medium heat.
  • Add minced garlic and sauté for 30 seconds until fragrant.
  • Pour in white wine (or chicken broth) and let it simmer for 2-3 minutes to reduce.
  • Stir in lemon juice and red pepper flakes.
  • Add shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink and opaque.
  • Remove from heat and toss in the cooked pasta, adding reserved pasta water for extra creaminess.

Step 3: Assemble and Bake

  • Preheat oven to 375°F (190°C).
  • Transfer the shrimp and pasta mixture to a greased 9x13-inch baking dish.
  • Sprinkle shredded mozzarella and grated Parmesan evenly over the top.
  • Bake uncovered for 15-20 minutes or until the cheese is golden and bubbling.
  • Garnish with chopped fresh parsley before serving.
