Ingredients

  • 4-6 boneless skinless chicken breasts or thighs
  • 1 cup brown sugar
  • cup soy sauce
  • 6 cloves of garlic minced
  • ¼ cup honey
  • ¼ cup ketchup
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes optional, for heat
  • 2 tablespoons cornstarch for thickening
  • 2 tablespoons water
  • Chopped green onions for garnish

Instructions

  • In a bowl, whisk together the brown sugar, soy sauce, minced garlic, honey, ketchup, sesame oil, and red pepper flakes (if using).
  • Place the chicken pieces in the bottom of your slow cooker.
  • Pour the sauce mixture over the chicken, making sure each piece is well-coated.
  • Cover and cook on low for 6-7 hours, or on high for 3-4 hours. The chicken should be tender and easily shred with a fork when done.
  • About 30 minutes before serving, mix the cornstarch and water in a small bowl to create a slurry. Stir this into the sauce in the slow cooker to thicken it.
  • Cook for an additional 30 minutes on high, or until the sauce has thickened to your liking.
  • Garnish with chopped green onions before serving.

Notes

Pro tip: For those with dietary restrictions, you can substitute coconut aminos for soy sauce and use a low-carb brown sugar alternative to make this dish gluten-free and lower in sugar.
