Instructions
Prepare the roast:
Pat the chuck roast dry with paper towels and season generously with salt and pepper on all sides.
Sear the beef:
Heat olive oil or butter in a large skillet over medium-high heat. Sear the roast for 2–3 minutes per side, until browned. This helps lock in flavor and adds depth to the dish.
Caramelize the onions:
In the same pan, add the sliced onions and cook for about 8–10 minutes until soft and golden brown. Stir occasionally to prevent burning. Add the garlic and cook for 1 more minute.
Deglaze the pan:
Pour in a splash of beef broth or red wine, scraping up any browned bits from the bottom of the pan. This will enrich your sauce.
